Blackberry & Mint Mocktail

This non-alcoholic drink is so refreshing with the flavors of the fresh fruit and mint. It requires only couple steps, and the rest is a lot of steeping to really emulsify the flavors!

I don’t drink alcohol as often, because I lift, and regularly track my macros. Alcohol hinders progress, and for me, it's not worth the months of progress for a night of drinking. I’ll indulge once in a while, but I like to stay on track. That’s why mocktails are my go-to! They’re so fun to make, meet my macros, taste delicious, & I don’t have to deal with the fuss of having a headache after... or is that just me lmao I’m old smh. Hope you enjoy this one! 💜

Blackberry & Mint Mocktail

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes


Ingredients

1 cup water

1 cup cane sugar

1/2 medium english cucumber thinly sliced

20-25 mint leaves (plus additional for garnish)

1/2 cup blackberries

1.5 tsp lemon juice

1/4 cup club soda (or ginger beer)


Directions

  1. In a medium sauce pan, add water and sugar. Bring to a boil, then remove off heat. Add cucumber and mint leaves. Cover and steep for 20 minutes.

  2. During the end of the steep time, add blackberries with lemon juice to a shaker and muddle till it gets broken down evenly. Add this all to your cucumber and mint mixture, and steep for an additional 10 minutes.

  3. To a tall glass, strain, add your mixture, add ice, and finally add club soda. Garnish with blackberries & mint in the end.

Notes

- If you like the little seeds of blackberries while drinking, don't strain completely.
