Chewy Oatmeal Chocolate Chip Cookies

Honestly, I never got the hype with oatmeal choc chip cookies, but of course, after I perfected my version of a classic recipe, oh man. I get it. These cookies really hit the mark. They were soft to touch & chewy to taste, with the added nuttiness from the oats!

These are adapted from KAF 2015 cookie of the year, and they were declared cookie of the year for a reason! They have a delectable soft exterior, and is chewy with every bite. Enjoy 🤎

Chewy Oatmeal Chocolate Chip Cookies

Prep Time: 10 minutes

Cook Time: 12 minutes

Total Time: 22 minutes


Ingredients

2 sticks of butter (16 tbsp) - room temperature

2 cups brown sugar

1 large egg

1 egg yolk

1 tbsp vanilla extract

2 cups all purpose flour

3/4 old fashioned rolled oats

1 tsp baking powder

1 tsp baking soda

3/4 tsp salt

2.5 cups of semi sweet chocolate chips


Directions

  1. Preheat the oven to 325. In a large bowl, add butter and beat till creamed. Then, add brown sugar, and beat till combined. Add egg, egg yolk, and vanilla extract.

  2. In a medium bowl, add flour, oats, baking powder, baking soda, salt, & whisk.

  3. Add flour mixture to butter mixture & mix till combined. Lastly, add in chocolate chips, and mix till cookie dough is combined.

  4. To a lined baking sheet, add about 1/4 cup to make fairly large cookies. Sprinkle some oats on top and bake for 12-17 minutes, depending on how crispy or chewy you want them! Cool completely on a baking tray then serve.
