Tarts are so fun to make and pretty easy to put together. It’s minimal hands on time. Most of the time is the tart chilling, so it can definitely be made the night before your occasion!

Dark Chocolate and Pomegranate Tart
Prep Time: 20 minutes
Cook Time: 20 minutes and overnight
Total Time: 40 minutes and overnight
Ingredients
Chocolate Crust
3 cups of Simple Mills double chocolate almond cookies
6 tablespoons of unsalted butter melted
Dark Chocolate Filling
1 cup heavy cream
2 cups dark chocolate chips
1/4 cup unsalted butter - cooled
Directions
Preheat oven to 350. Add the cookies to a food processor and pulse till you get crumbs. Transfer to a mixing bowl, add butter, and mix to combine. Add this to a tart pan and press down to cover the pan. Bake for 5-7 minutes (with pie weights) till it forms a crust. After baking, transfer to fridge to chill.
For the filling, add the chocolate chips to a bowl and set aside. Add the heavy cream to a sauce pan with the butter on medium heat and bring to a slight boil. Add to the choco chips and let it set for about a min. Then, slowly stir till incorporated. Pour this over your crust and place back into the fridge to set. To serve, add pomegranates, and even slight garnishes of basil.
