Chipotle's Cilantro Lime Rice

Chipotle is a weeknight staple for me after a long deadlift session. However... those $8 bowls add up! I wanted to make my own rice bowl at home, and after experimenting, I've made my own copy-cat version of Chipotle's Cilantro Lime Rice.

It turns out SO fluffy every time and has a great freshness from the cilantro and zing from the lime flavoring. Enjoy 💚

Chipotle's Cilantro Lime Rice

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes


Ingredients

1 cup extra long grain rice or Basmati rice washed

1&3/4 cups water

Juice from 1 lime

1 tbsp of juice from 1 lemon

1 bunch of cilantro minced


Seasoning

Salt & Pepper to taste

1&1/2 tsp of garlic powder


Other

1 tbsp of unsalted butter

2 tsp olive oil


Directions

  1. To a medium pot, add your drained rice, water, butter, and 1 tsp of salt. Bring to a boil, cover, and simmer for 15-18 minutes.

  2. At the end of the cook time, uncover, fluff the rice and add: olive oil, lemon juice, lime juice, cilantro, salt, and garlic powder. Mix till combined.

Notes

- Feel free to use plant-based butter and olive oil if needed.

- Lemon juice is optional but is a great addition with the lime.
