Gingerbread Cookies

Couldn’t be Holiday cookie decorating without featuring the quintessential Gingerbread Man! How cute is this little guy! Actually, this was my first time ever making & even eating one! Absolutely scrumptious!

Gingerbread Cookies

Prep Time: 15 minutes and 2 hours

Cook Time: 10 minutes

Total Time: 25 minutes and 2 hours


Ingredients

3&1/4 cup all purpose flour

1 tbsp ground cinnamon

1 tbsp ground ginger

1/2 tsp ground nutmeg

3/4 tsp baking soda

3/4 cup unsalted butter

1/2 cup dark brown sugar

1/2 cup unsulphured molasses

1 large egg

1 tsp vanilla extract


Directions

  1. In a large bowl, whisk your dry ingredients. In a medium mixing bowl, whisk butter and sugar till creamed. Add in egg, molasses, vanilla and beat till incorporated.

  2. Add dry to wet and mix to combine. Divide the dough into two, form a ball, and flatten into 1 inch disks. Wrap tightly with a plastic wrap and refrigerate for 2 hours.

  3. Preheat oven to 350 and take out one dough and roll till it’s 1/8 inch thick. Cut the cookies into desirable shapes and bake for 8-10 minutes. Cool completely and decorate with icing sugar.
