Heirloom & Sun-Dried Tomato Spaghetti with Fresh Basil

After a long day of work, all I want is a quick and easy bowl of spaghetti with minimum ingredients and maximum flavor. This spaghetti recipe will give you just that.

This beautiful spaghetti has two kinds of tomatoes - heirloom & sun-dried, tons of garlic, and fresh basil. It can be put together in less than 20 minutes, & is absolutely delectable. Enjoy ❤️

Heirloom & Sun-Dried Tomato Spaghetti with Fresh Basil

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes


Ingredients

1 pack of 100% semolina spaghetti

1/2 sundried tomatoes minced

3/4 cup of heirloom cherry tomatoes cut in halves

4-5 cloves of garlic minced

1 bunch of basil roughly chopped

2 tbsp sliced almonds

2 tbsp veggie stock

1.5 tbsp cream cheese

1 tbsp heavy cream

1/4 cup parmesan


Seasoning & Other

Couple tbsps of extra virgin olive oil

2 tbsp garlic & herb butter

Salt & pepper to taste

1 tsp dried oregano

1 tsp dried sage


Directions

  1. To a large pot, prep your salted water and cook pasta as per instructions, until almost Al Dente, which will be around the 7 minute mark. We'll finish cooking the pasta in the sauce pan. Do not drain the pasta, and preserve all the pasta water.

  2. While the pasta is cooking, prepare the garnish. Add almonds to a large sauce pan and toast for 2-3 minutes till golden brown. Set aside to cool completely.

  3. In the same pan, start the sauce. Over medium heat, 1 tbsp garlic butter with a drizzle of olive oil. Once warm, add in garlic with the sun-dried tomatoes and cook till fragrant. Add in veg stock, sour cream & heavy cream and simmer on low heat.

  4. At this point, the pasta will be ready. Add in cherry tomatoes, spaghetti, and the rest of the butter with parmesan and 1/3 cup pasta water. Simmer till reduced a bit, then add in your seasonings. If the pasta is too reduced, add in couple tbsps of pasta water a bit at a time. To serve, add to a bowl and garnish with almonds, basil, and parmesan.
