Eggless Marble Cake

This beautiful pound cake has the prettiest design. It turned out so fluffy and delicious, you can't even tell it doesn't have eggs.

Eggless Marble Cake
Prep Time: 20 minutes
Cook Time: 35 minutes
Total Time: 55 minutes
Ingredients
2 cups and 2 tablespoons of all purpose flour
1/2 teaspoon baking soda
2 teaspoons of baking powder
1/2 salt
1&1/3 cup of granulated sugar
1/2 vegetable oil
1 cup sour cream
4 tablespoons of cocoa powder
4 tbsp of warm water
1 tablespoon vanilla extract
Directions
Preheat oven to 350 and line a Cake Loaf Pan. In a medium bowl whisk flour, baking soda, baking powder, salt. In another bowl with a stand mixer, beat your sugar, oil, and sour cream together. Mix till everything combines.
Add your flour mixture to your liquid mixture then add milk slowly. Mix till smooth.
In a small bowl, mix cocoa powder and warm to create a chocolate sauce.
Divide your batter into two bowls. One will be vanilla and the other will be chocolate. In your vanilla bowl, add vanilla extract and mix. In your chocolate bowl, add your chocolate sauce and mix.
Scoop with a spoon - your vanilla batter on your top left of the pan, then on the bottom middle, then on the top right. Then scoop your chocolate batter on the bottom left, top middle, and bottom right. The idea is to create a checkerboard view and to layer. So your second layer of vanilla will be: bottom left, top middle, and bottom right; for chocolate it will be top left of the pan, then on the bottom middle, then on the top right. It’s the same down, up, down pattern - but alternating. Please see my Marble Cake story for more details.
Once you have about 4-5 layers, you’re ready to marble. Take a butter knife and make vertical zig zags from one side of the pan to another. Do the same thing horizontally. Take your knife all the way down deep to ensure the marbling is throughout the cake and wipe your knife between the horizontal and vertical zig zags. Also, just stick with one horizontal and one vertical zig zag swirl to keep the marble design.
Bake this for 35-45 minutes & let it cool for at least 20 minutes before you cut into it.
