Garlic & Herb Zucchini Noodles

Here's a super easy and healthy weeknight dinner recipe that is a staple for me. It is fuss-free and can be made within 25 minutes!

It’s low carb but filling, and can also be made vegetarian if you want to add some cheese! Hope you give it a try!

Garlic & Herb Zucchini Noodles

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes


Ingredients

1 whole zucchini to spiraling or pre-made zucchini noodles. You can find them in the frozen section or produce section.

1 cup of Heirloom Tomatoes

4-5 cloves of garlic

Fresh Basil, Oregano, and Rosemary

Seasoning: salt, pepper, dried thyme, chili flakes, and a bit of za’atar


Directions:

  1. Prep: I spiralized my noodles, but if you’re using premade frozen ones - start thawing it. For the produce ones, use a paper towel and start squeezing out any excess water. Cut your heirloom tomatoes in slices, thinly slice your garlic, and get your seasoning ready.

  2. To a pan over medium heat, add 1 tsp EVOO and your garlic, pepper, & chili flakes. Cook till fragrant then add your zucchini noodles. Then, stir constantly and cook till al-dente. If you cook longer, they will wilt. Add in 1/2 tsp of Vegan Butter.

  3. Add your tomatoes, herbs, and seasoning (except salt). Mix till everything is coated then remove from heat. Lastly, add salt. Add salt at the end because salt sucks the water from the noodles which results in a watery dish.
