Garlicky Roasted Asparagus with Lemon, Basil, and Thyme

This dish is one of my staple weeknight side dishes. It gets me more excited because it’s actual healthy food I’ll eat and not baking treats. Don’t get me wrong, those are so good, but I usually take a small bite and end up giving them away! This star of this dish is asparagus of course! They have this amazing soft crunch from the asparagus, and pair so beautifully with the freshness from the herbs - all with those citrus undertones!

I usually eat this with quinoa & tofu when I’m lifting, as it’s great for meeting macros. It’s bursting with flavors, packed with vitamins, & can all be done on one sheet pan! Hope y'all enjoy this one! It’s so healthy and has tons of awesome summer flavors!

Garlicky Roasted Asparagus with Lemon, Basil, and Thyme

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes


Ingredients

1 asparagus bunch

1/2 lemon slices & zest from the other 1/2 lemon (I didn’t use the whole 1/2 tbh just a bit - depends how much lemon flavoring you want!)

Handful of herbs - Basil & Thyme. Also I threw in some dill at the end and it paired great with the lemon!

3-4 cloves of minced garlic or thinly sliced. I did both!

1-2 tbsp of slivered almonds

Extra Virgin Olive Oil

Seasoning: salt, pepper, and a dash of cayenne

Directions

  1. Preheat oven to 420. Start prepping everything: cut off the ends of your asparagus, mince your garlic, slice and zest your lemon, get your herbs ready.

  2. To a large sheet pan, add your asparagus, minced garlic, lemon zest, lemon slices, herbs, and seasoning. On the other side of the pan, add your almonds. Bake for 12-15 minutes. At the 5-6 minute mark, take out the almonds. To serve, garnish with the roasted almonds and another squeeze of lemon.
