I’ve made classic vanilla & lemon Madelines loads of times, so it was only fitting I have to make a variation for green series when I was posting on instagram!

These turned out absolutely decadent and are an awesome variation to the Traditional French recipe. Hope you enjoy!

Matcha Madelines

Prep Time: 1 day and 20 minutes

Cook Time: 10 minutes

Total Time: 1 day and 30 minutes

Ingredients

1/2 cup unsalted butter at room temperature

2 large eggs

1/2 cup caster sugar

1&1/2 teaspoon vanilla extract

1/2 teaspoon almond extract

1 teaspoon whole milk

1/2 drop of green food coloring

1 cup all purpose flour

1/2 teaspoon baking powder

1&1/2 teaspoon matcha powder

Pinch of salt

1-2 tablespoon of butter for pan

Directions

  1. Brown unsalted butter in a small sauce pan over low - medium heat.

  2. In a medium bowl, large eggs sifted caster sugar. Beat this for about 8-9 minutes till the mixture becomes thicker. Then, add in extracts, milk, and food coloring.

  3. While that’s beating, in another bowl, whisk: sifted all purpose flour, baking powder, matcha powder, salt. After your egg mixture is done beating, slowly add your dry ingredients 1/2 cup at a time. You’ll want to be dealing with the mixture slowly and delicately. Fold in the dry ingredients with a silicone spatula slowly till everything’s combined, but don’t over mix. Lastly, add in your melted butter slowly to your mixture and fold gently. The batter should be silky and shiny.

  4. Cover the batter to chill overnight. The next day, preheat your oven to 325. Melt 1-2 tbsp of butter and use a pastry brush to grease the pan. Then add about 1 tbsp of the mixture to the center of the pan. Bake for 10-12 minutes and cool completely. Last step is to dust a bit of confectioners sugar on top.
