Mexican Hot Chocolate Cookies

COME. ON. These decadent cookies are rich in chocolate flavor with a beautiful kick of spice towards the end of the bite, and have a sprinkling of brown sugar. A little fudgy, a little chewy, a little spicy. Oh mannn. This one’s a good one.

The difference between a classic Hot Chocolate and Mexican Hot Chocolate is that a Mexican Hot Chocolate tends to be a bit more grainy, richer in flavors, and has a kick to it, usually cinnamon, & sometimes even chili powder. Now imagine all of that goodness -- but in a cookie form. Hope you give it a try!

Mexican Hot Chocolate Cookies

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes


Ingredients

1&1/2 cups all purpose flour

3/4 tsp cream of tartar

1/2 tsp baking soda

1/4 tsp baking powder

1/4 tsp salt

1/4 cup unsweetened cocoa powder

1/8 tsp chili powder

1 tsp ground cinnamon

1/2 cup unsalted butter

3/4 cup plus 1 tbsp brown sugar (plus extra for dusting)

1 egg - room temp


Directions

  1. Preheat oven to 350 and line a baking sheet with parchment paper. Cream butter & brown sugar till fluffy, then add in your egg and whisk till combined. Create a well in the mixture, and add the rest of the dry ingredients and whisk till combined.

  2. Add about 1 tbsp of dough to the sheet and sprinkle brown sugar on top.

  3. Bake for 8-12 minutes and let it fully cool before serving.
