Mint & Cilantro Rice

Mint rice is one of my faves to make when I feel like eating rice. This is a light vegan rice dish and very easy to put together.

You could also substitute white basmati rice with brown rice or even quinoa. I haven’t tried it, but those are healthier alternatives. Honestly though, I’d eat this with white rice.. it’s so worth the extra carbs.

Mint & Cilantro Rice

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes


Ingredients

1 cup fresh mint leaves

1/2 cup fresh cilantro

2-3 green chilis

1 teaspoon grated ginger or 1/2 teaspoon ground ginger

1 cup rice

2 cups water

Seasoning: salt to taste, chili powder, garam masala, ground cumin, bay leaf


Directions

  1. Make your mint paste first. To a food processor add mint leaves, cilantro, green chillis, and ginger. As you all know I looove garlic in everything, so next time I’d probably add couple cloves to the paste, but didn’t do it this time. Pulse this with 2 tbsp of water till it comes together. If you need to add water, add it 1 tbsp at a time. Once the paste is at an optimal consistency, it’s time to measure. So, you’ll need 2 cups of liquid for the 1 cup of rice - so measure out the paste and add the remaining water. I.E - I had about 1/2c of the paste so I added only 1.5 cups of water - for a total of 2c of liquid.

  2. Wash your rice (I used 1 cup) and keep it aside. In a pan over medium heat, add coconut oil. Then, add 1.5 tsp of cumin and 1 bay leaf. Once the cumin starts spluttering and the bay leaf turns a bit brown, add your rice. Dry roast this for 2 min.

  3. Then, add in your water + paste. Then, add in 1.5 tsp of garam masala and 1 tsp of chili powder. Let the rice boil then cover and simmer for 8-10 minutes. Mix, and serve with raita or any plant based yogurt if you’re vegan!
