The SOFTEST Molasses Cookies! I’m talking Chewy. Filled with ginger. Melt off-your-mouth type of cookies. These are a sure hit for your holiday cookie box!

Molasses Cookies

Prep Time: 20 minutes and overnight

Cook Time: 8 minutes

Total Time: 28 minutes and overnight


Ingredients

1/2 cup all purpose flour

1 tsp baking soda

3/4 tsp ground ginger

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup dark brown sugar

2/3 cup unsalted butter

1/4 cup unsulphured molasses

1 egg

1/4 tsp vanilla extract


Directions

  1. Preheat oven to 350. Cream butter till soft. Then add in sugar, molasses, egg, vanilla extract. Add in flour and rest of dry ingredients till incorporated. Chill the dough for an hour. Ideally overnight.

  2. Roll the dough into 1” balls and coat a sprinkling of sugar. Bake for 8 ish minutes till the cookie spreads. Cool completely.
