NYC-Style Everything Bagels

Ever since moving to the west coast, there's nothing I miss more than a good old fashioned New York City Everything Bagel. You know what I'm talking about right? A beautiful golden brown color, crispy on the outside, chewy on the side, and absolutely delectable. Enjoy 🤎

NYC-Style Everything Bagels
Prep Time: 2 hours 15 minutes
Cook Time: 25 minutes
Total Time: 2 hours 40 minutes
Ingredients
1.5 cups of warm water
2 3/4 tsp of active yeast
4 cups bread flour
1 tbsp brown sugar
1.5 tsp salt
Couple tbsps of olive oil
1/4 cup honey
Egg wash - beat 1 egg white with 1 tsp cold water
Homemade Everything Bagel Seasoning (or feel free to use everything bagel seasoning)
2 tbsp poppy seeds
2 tbsp sesame seeds
1 tbsp dried minced onion
1 tbsp garlic flakes
1 tbsp salt
Directions
In a large bowl, add warm water and yeast. Whisk and let this sit for 5 minutes.
Add in bread flour, sugar, and salt. The dough will be dry, so mix in your stand mixer till you can't. Then, transfer to a floured counter and knead for 7-8 minutes till combined.
To a medium sized bowl, add olive oil and grease the bowl. Add the dough to the bowl, cover, and rest at room temperature for 90 minutes till the dough doubles.
At the end of the rise, deflate & transfer to greased work surface. First, divide into about 8 balls and start shaping them into bagels by flattening then puncturing a hole in the middle. The key is to not be neat as authentic NYC bagels are very rustic. Once you have 8 bagels, add to a lined baking sheet, cover, and preheat oven to 420.
In a large pot, add 2 quarts of water on high heat. Once the water is at a rolling boil, whisk in honey. Add in 1-2 bagels at a time and cook both sides for about 30 seconds - 1 minute. The bagels will get significantly larger and will float. Once both sides are coated evenly, transfer to the baking sheet.
Coat each bagel with an egg wash and a generous amount of seasoning. Bake bagels for 20-25 minutes and cool at least 15-20 minutes before serving.
