Red Velvet Mini Pancakes

It is definitely a good day every time I get to scarf these down. These were way too pretty and delicate to eat, but I would make them again just so I can stare at them.

They were so easy to make and will surely impress! Hope you give it a try!

Red Velvet Mini Pancakes

Prep Time: 20 minutes

Cook Time: 35 minutes

Total Time: 55 minutes


Ingredients

3/4 cup all purpose flour

6 tbsps caster sugar

1 tsp cocoa powder

1 tsp baking powder

Pinch of salt

1 egg

1/8 cup unsalted butter melted

1/2 cup buttermilk

3 tbsp whole milk

1 tsp vanilla extract

Red food coloring - couple drops


Directions

  1. In a large bowl, add your dry ingredients and whisk to combine. In a medium bowl, add your wet ingredients and whisk. Add your wet to your dry and mix till incorporated. Add the batter into a piping bag and keep aside.

  2. In a medium pan or a griddle, add some butter and wipe the excess. With your piping bag, pipe about 1-2” circles far apart so you have room to flip. Cook for 30-50 seconds till slightly browned but cooked. Repeat this process.

  3. To serve, I had it with milk which was surprisingly good or even with just some honey. Otherwise, it goes really well with a cream cheese glaze which is essentially an oz of cream cheese, 1/4 cup powdered sugar, couple tbsps of whole milk.
