Okra Curry

This is one of my favorite veg curry/stir fry - Okra Stir-Fry!! Okra is actually a superfood and contains so many healthy antioxidants, fiber, and nutrition. I eat it all the time with Quinoa & Lentils. It has the perfect blend of spices and is incredibly easy to make.

Okra Stir Fry

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes


Ingredients

1 pack of okra - if you’re buying individuals, I would get about 1 lb.

Seasoning: 1 tsp of: salt, garam masala, chili powder, cumin & 1/2 tsp of turmeric.


Directions

  1. Wash and completely dry your okra to make sure there’s no excess water. Then, cut the ends off, and the okra into medium sizes. Add all your cuts to a medium bowl.

  2. Heat a pan on medium with 1.5 tsp of coconut oil. Then, add your cumin seeds and wait till it splutters.

  3. Add your okra and sauté for about 20 seconds. Then, cover it and reduce heat to low - cook for 5 minutes. Uncover, add your spices & salt, then sauté for 2 minutes. Then, cover again for the last 5 minutes. After, your okra should have reduced in size, but still have gotten a nice crunch.
