Tuscan Kale Salad with Roasted Chickpeas & Creamy Tahini

Are you one of those people that think "salads are boring"? Let me change your mind with this recipe. This salad has masala & herb spiced roasted chickpeas, soft & massaged Tuscan Kale, crunchy hemp hearts, and all topped with a creamy Tahini sauce. It's a good one.

To be honest, I actually used to hate kale because it is hard to eat, but I'm going to share a trick I learned that will make your kale actually tasty, which is simply just massing the kale. Massaging means to add the kale in a bowl, drizzle with olive oil, and a pinch of salt. Then, literally just massage the leaves with your hands to break it down so it’s not as tough to eat.
This kale salad is one of my absolute favorite salads because it has so many textures and flavors all in one bite, with the added bonus of being a hearty salad. Enjoy 💚

Tuscan Kale Salad with Roasted Chickpeas & Creamy Tahini
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Ingredients
1 can chickpeas (drained and dried)
1/2 pack or 1 bunch of Tuscan Kale
Couple tbsps of extra virgin olive oil
1 tbsp hemp seeds
Dressing
1 tbsp tahini
1/4 tsp olive oil
Salt & pepper to taste
1/4 tsp oregano
1/4 tsp garlic powder
1/8 tsp cayenne
Seasoning
Salt & pepper to taste
2 tsp garlic powder
2 tsp cayenne
1 tsp za'atar
Directions
Preheat the oven to 420. To a medium mixing bowl, add chickpeas, a drizzle of olive oil, and seasonings. Bake for 15-18 minutes depending on the crispiness preference.
While chickpeas are roasting, massage the kale. Add kale to a mixing bowl with a large drizzle of olive oil, and a pinch of salt. Work the kale with your hands by massaging it, for about 1-2 minutes and you'll literally notice it breaking down right away.
To make the dressing, add tahini, olive oil, and seasonings to a small bowl. Mix till combined, then add about 1/4 tsp of water at a time to reach a drizzling consistency.
To assemble, add kale to a salad bowl. Add roasted chickpeas, hemp seeds, and drizzle the dressing.
