Vegan Green Goddess Gazpacho

If you’re looking for a refreshing soup for hot summer days, look no further!

I’ve been itching to make a gazpacho since my friend made a beautiful one for my Summer Herbs Challenge! A gazpacho is essentially a cold soup with raw vegetables, and sometimes even spicy. Knowing me, I obviously added ton of flavor and made sure it had a kick. It is the perfect summer soup. Hope you enjoy!

Vegan Green Goddess Gazpacho

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 35 minutes


Ingredients

2 hot house cucumbers sliced

Handful of spinach

6-10 spring onions roughly chopped

Handful of Herbs to taste: Dill, Basil, Mint, Thyme

Zest & juice from 1/2 lemon

1 cup coconut yogurt

2 tbsp EVOO

3-5 garlic cloves

Directions

To make the soup - literally add everything in a high-speed blender to blend till everything is mixed, and that’s it! It’s usually served cold so I just prep the veggies straight from the fridge and drink right away while it’s cold. Else, it’s awesome to prep the night before/ahead of time and kept in the fridge till it’s ready to be eaten!


To serve, I added a bit of the coconut yogurt with olive oil, and a bunch of the herbs I used in the dish itself! Lastly, I added a handful of hemp seeds for an added crunch!
