Vegan Mac & Cheese

I absolutely loveeee this cool autumn weather and do not miss summer at all lmao. This dish is literally comfort in a bowl. When I tell you, the cheese sauce is immaculate.... MAN. You can’t even tell it’s vegan, I was shook!

Usually vegan Mac & cheese has cashews as their sauce base but I preferred something nuttier so I made this with almonds, and it was paired beautifully with coconut milk & herbs!

Vegan Mac & Cheese

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes


Ingredients

Coconut Oil to cook

1/2 cup blanched almonds

1/2 head cauliflower

4 cloves crushed garlic

1/2 white onion diced

Pasta of choice - elbow/macaroni/rigatoni

2 tablespoon nutritional yeast

1/2 lemon sqeezed

1 can coconut milk

Seasoning - salt, pepper, cayenne, dried oregano, dried basil, dried thyme

Optional - vegan parm


Directions

  1. Ia large pan, add coconut oil & cook blanched almonds with 1/2 of a cauliflower. Stir till soften then transfer to a bowl and keep aside.

  2. In the same pan, add in crushed garlic with diced onion. Saute till garlic is golden brown and onions are translucent.

  3. Meanwhile, start cooking your pasta. While your pasta is cooking, transfer your cauliflower & almond mixture + onions & garlic all into a blender with nutritional yeast, 2 tbsp of water, and a squeeze of lemon. Blend till smooth and creamy.

  4. Add your sauce paste to the sauce pan with ooconut milk. Then, add your cooked pasta with a bit of pasta water. I mixed it with the sauce and let it simmer for 2-3 minutes then added couple tbsp Vegan Parmesan! Lastly, season your dish with salt, pepper, cayenne, and dried oregano. I also added basil & thyme towards the end.
