Overnight Oats: Almond Strawberry & Toasted Coconut Banana

I am so excited to share these two variations of Vegan Overnight Oats with y'all. It is so easy to make, and is a perfect mid-day snack or breakfast on-the-go idea.

Honestly.. I used to hate making overnight oats at home purely they never used to turn out right. It would always be too thick or too runny. After experimenting a bit, I found the perfect ratio of oats to milk, which works awesome every time and I think you'd love it!


The key is to not have the same ratio for both oats to milk so that the overnights oats are malleable to work with the next day. Once you have precise measurements for the base and then you can play around with the add ins/toppings. Enjoy 🍓🍌🥥
Overnight Oats: Almond Strawberry & Toasted Coconut Banana
Prep Time: 10 minutes
Cook Time: At least 6 hours or Overnight
Total Time: 6 hours & 10 minutes/Overnight
Almond Strawberry
Ingredients
Base
1/3 cup rolled oats
1/2 cup almond milk
1 tsp chia seeds
1 tbsp strawberry jam
1 tbsp slivered almonds
1 tsp almond butter
Optional - 1/2 tsp almond extract
Toppings
2-3 strawberries diced
2-3 blackberries
1 tsp of honey
Directions
In a mason jar or a glass, combine rolled oats and coconut milk. Mix till combined.
Add in chia seeds, jam, almonds, almond butter, & extract. Mix, cover, & refrigerate.
The next day, uncover, and you can transfer to another bowl for presentation. Add more almonds on top, strawberries, blackberries, and a drizzle of honey.
Toasted Coconut Banana
Ingredients
Base
1/3 cup rolled oats
1/2 cup Califa Farms Toasted Coconut Milk
1 tsp chia seeds
1 tbsp shredded coconut
1 tsp cashew butter
1/2 tsp vanilla extract
Toppings
1 tsp shredded coconut
1/2 banana sliced
1 tsp honey
Directions
In a mason jar or a glass, combine rolled oats and coconut milk. Mix till combined.
Add in the chia seeds, coconut, cashew butter, and extract. Mix, cover, & refrigerate.
The next day, uncover, and optionally - transfer to another glass for presentation. Toast some shredded coconut over a pan on medium heat, stirring often for 2-3 minutes. Add sliced bananas, toasted coconut, and honey.
Notes
- If you prefer your oats to be thicker, add the same ratio of milk to oats.
