I love granola so much because of its versatility! This granola has become a staple for me, as I'll just make a batch of it during the weekends and consume throughout the week as: breakfast with oat milk, a cup of it as a snack, or even toppings on my Halo Top for dessert!

Granola usually consists of rolled oats, various toppings, and a binding ingredient like honey or maple syrup. It is then baked and stirred often while baking to retain the cluster shape, then cooled completely before consuming to get that crunch. The really awesome thing about granolas is that you can just throw in whatever you have on hand with rolled oats and your flavorings and can get a different variation every time.

This granola recipe has whole grain rolled oats, coconut flakes, various nuts, natural sweetness from honey, and a sprinkling of semi-sweet chocolate chunks at the end. Enjoy 🤎
Whole Grain Honey & Coconut Granola
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Ingredients
2 cups whole grain rolled oats
1/4 cup shredded coconut
1/4 cup chopped walnuts
1/4 cup slivered almonds
2 tbsp chia seeds
2 tbsp semi-sweet chocolate chunks (not chips)
1/4 cup honey
Directions
Preheat oven to 350F. In a large mixing bowl, add oats with shredded coconut, walnuts, almonds, and chia seeds. Mix till combined then add in honey to coat the granola.
Transfer to a sheet pan and separate the granola a bit. I like sticking some together to create little clusters. Bake for about 25 minutes and every 6-7 minutes, stir the granola to ensure every part of the granola gets cooked evenly.
At the end of the cook time, you should have a beautiful golden brown color. Cool completely, so the granola hardens. Finally, top it off with the chocolate chunks.
