Rose Cardamom Cookies with Pistachios

These buttery-soft cookies have a beautiful marriage of rose and cardamom, with a slight crunch of the pistachios at the end. They literally melt in your mouth.

These delectable cookies can be made with less than 10 ingredients and are perfect for a midday snack with some Chai šŸ˜

Rose Cardamom Cookies with Pistachios

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes


Ingredients

4 tbsp melted ghee (1/4 cup)

4 tbsp olive oil (1/4 cup)

3/4 cup confectioners sugar

1.5 cups all purpose flour

2 tsp vanilla extract

2 tsp rose water

2 tbsp grounded pistachios


Directions

  1. Preheat oven at 350. Put your pistachios in a mortar and pestle and beat them till chopped and grounded. I like a mix of it because it adds texture to the cookies.

  2. Mix the rest of ingredients in a medium bowl, might be hard to whisk to take it out so start kneading it a bit. Smooth it out and roll it out with a pin. Then, use a cookie cutter to cut the cookies into circles.

  3. Set them on a greased parchment paper about 1-2 inches apt. Take a bit of your pistachios as garnish and lightly press on top of your cookies.

  4. Bake these for 12-14 minutes. Keep checking after 11 but you just want to bake them till they’re lightly brown. After, set them to cool on a rack and ENJOY!
