Spicy Elotes with a Twist

These beautiful Elotes are a perfect summer snack! For those who don't know: Elotes are corn on the cob then added with mayonnaise with chili powder, lime juice, and finished off with Cotija cheese and cilantro.

Not so fun fact - I used to hate corn. Not because of the taste or anything, but because it would always get stuck in my teeth. I make exceptions though for corn on the cob once every couple years tho! This one's a good one. Hope y'all give it a try!

Spicy Elotes with a Twist

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes


Ingredients

3 tablespoons of Sir Kensington's Chipotle Mayonnaise

1 tablespoon cayenne

1 tablespoon garlic powder

Salt & pepper to taste

Lime

2-4 corn on the cobs

1/2 cup grated cotija

2 tablespoon of fresh cilantro chopped


Directions

  1. In a bowl, mix mayonnaise, cayenne, garlic powder, and salt and pepper to taste with a good squeeze of lime. Start grilling your corn. While it’s charring, make your cotija mixture which is just the grated cotija with cilantro.

  2. To assemble, spread your mayo mixture then add your cotija blend. It’s going to be super messy but it will taste super delish so hella worth it.
