Whole Grain Banana Oat-nut Muffins

This is a super healthy & delicious grab-and-go breakfast/snack that’s so convenient and easy to make!

They can be made the day before or even as a meal prep on a Sunday night. They last pretty well over the course of the week. You can even make it your own by adding whatever toppings you'd like!

Whole Grain Banana Oat-nut Muffins

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes


Ingredients

2 cups whole wheat flour

1/2 cup old fashioned whole grain oats

2 teaspoon ground cinnamon

1&1/2 teaspoon baking soda

1/2 tsp salt

3 ripe bananas

3 eggs room temperature

1/3 cup vegetable oil

1/3 cup honey

1/4 cup almond milk

2 tsp vanilla extract

1/2 cup chopped walnuts

Optional - 1/4 cup chocolate chips


Directions

  1. Preheat your oven to 425, and line your muffin tray. Whisk together: whole wheat flour with old fashioned whole grain rolled oats, cinnamon, baking soda & salt.

  2. In another bowl mash bananas then add in 1 egg at a time. Then, add vegetable oil honey, almond milk, and vanilla extract.

  3. Combine your wet to your dry ingredients 1/3 cup at a time. Lastly, add in any toppings or add ins.

  4. Add this to your lined cups and sprinkle oats on the top for that pretty presentation. Bake this for 15-18 minutes, or a bit more. My second batch, I’ve had to bake for 20 minutes so keep testing through the toothpick method! Cool on a rack & enjoy!
